CUMIN & HONEY CARROTS

8-10 carrots, peeled

4 tsp. unsalted butter

4 tsp. honey

1/2 tsp. salt

1/4 tsp. ground cumin

4 tsp. sesame seeds, toasted

1 tbsp. cumin seeds, toasted

Briefly toast sesame and cumin seeds in a dry skillet, set aside.  In a large saucepan, bring salted water to a boil.  Cut carrots on the diagonal into 1/2 inch slices.  Add carrots to boiling water and cook for 3-4 minutes until tender on the outside but very firm on the inside.  Drain and set aside.  In a large skillet, melt butter and honey until it starts to foam and then add in carrots and toss to coat.  Season with salt and cumin and cook for 5 minutes or until well glazed.  Sprinkle with sesame and cumin seeds, toss to coat and serve.
