Blueberry Vanilla Chia Seed Jam ~ Gluten Free!

3 cups fresh or frozen (defrosted) blueberries, washed and drained

4 tablespoons pure maple syrup

2 tablespoons chia seeds

1/2 teaspoon pure vanilla extract

Wash and drain your berries.  Add the berries and maple syrup to a medium saucepan.  Bring to a gentle boil over medium heat.  Reduce heat to medium-low and continue to simmer for 5 minutes.  Lightly mash with a potato masher or fork, but leave a little chunkiness to it for texture.  Add in the chia seeds, cook for about 15 minutes or until it reaches the consistency you prefer.  Remove from heat and add vanilla.
