2 avocados, peeled and diced
1 cucumber, diced (if using garden cukes, peel and scrape the seeds out. I used English, just peeled off some of the skin.)
1/4 cup red onion, sliced thinly
2 limes, juiced
1/2 cup fresh mint, finely chopped (measure after it’s chopped.)
1/2 cup feta cheese, crumbled
2 tbsp. extra virgin olive oil
Gently toss all ingredients together.
