Homemade Cashew Almond Larabars

Makes 12 Bars:

1 cup Medjool Dates, pitted

1 cup raw cashews

1/4 cup Almond Butter (or any nut butter you prefer)

1 tbsp water

Add everything into your food processor and puree until it starts to come together.  Add a little more water if needed.  Use your hands to form it all into a ball.  Press it down onto a sheet of wax or parchment paper.  I used a food chopper to press it down, make the sides straight and cut the bars.


You can make these as thick or thin as you like.  Mine were approximately 1/2″ thick.  Then decorate with whatever toppings you like or eat plain!  I used raw cashews and pecans as well as pumpkin, chia and hemp seeds.  Delicious!  Store in the fridge or leave in an airtight container on the countertop.
